I really like your idea, but I feel like there can be one more thing to tie it together, I'm not sure what it should be but it feels like something is missing. I think your best one is the colour one, pops the most to me.
I agree with Casey, the colour one is the best. It's looking pretty noisy though, what ISO were you shooting at? Perhaps another element you could use is sand? The texture is really fascinating and it would be cool to put the coconut on, albeit a little harder to find. Although because it is 'winter' people use it for sidewalks etc so I'm sure you could find some. You could even take coconut shavings and maybe use them for another element.
I think the second and third photos in black and white are great, especially because of the lighting and shadows, but I agree with Casey in that the photo needs a third element!
